How to make a Brazilian Carrot cake

Introduction 



As a Brazilian who likes sharing about Brazilian culture, I would like to introduce one of our favorite recipes, the Brazilian Carrot cake. You can easily make it, since the ingredients are easy to find.

 

Ingredients 


3 medium carrots (2 ¼ cups peeled and grated carrots)

4 eggs

1 cup (tea) corn oil

1 ½ cups of sugar

2 cups (tea) wheat flour

1 tablespoon of baking powder

1 pinch of salt
Cake pan
Baking accessories 
Oven  


Instructions 

 


1. Preheat the oven to 350°F (medium temperature). Grease a cake pan with butter. Sprinkle with wheat flour, shake and tap on the sink to remove excess.



2. In a bowl, put the flour, salt and yeast, passing through a sieve. Mix and reserve.




3. Wash and peel the carrots. Discard the end of the vine, cut the carrots into slices and transfer to the blender.




4. Add the oil to the sliced carrots. In a small bowl, break one egg at a time and transfer to the blender Add the sugar and beat until smooth, about 5 minutes.




5. Transfer the liquid mixture to a large bowl and gradually add the dry ingredients, mixing gently to combine.




6. Carefully transfer the dough to the pan and place in the oven to bake for about 45 minutes. To check if the cake is ready, stick a toothpick in the dough: if it comes out clean, you can take it out of the oven; otherwise, leave for a few more minutes, until fully cooked. 





Notes 


You can use a round or a rectangular shape. Just be aware of the oven time which can be different for each one.​

The perfect matching to this cake is a topping made with Brigadeiro.

To bake a Brazilian carrot cake, you will take around 1 hour. It is easy and you can have a piece of Brazil at home.

1. What should I do if I only have baby carrots?​
You can use baby carrots for this recipe. Only take care about the quantity that you are using. 

2. The cake didn't grow, what I did wrong? ​
​You may have forgot putting the correctly quantity of baking powder.
